Cauliflower Crust Pizza

A few months ago, we found out that the hubby and CJ are sensitive to gluten, which is in anything made with wheat, rye, and barley. Since then, they have been doing their best to be gluten-free. There are so many foods that they can no longer eat the way they used to. Sandwiches, pizza, anything with breading, crackers, cornbread, and the list goes on. BUT, what a difference a change in diet has made in their lives!  I now try to find creative ways to cook our favorite foods.  I do buy gluten free flour and mixes, but that can get really expensive. I found this recipe for Cauliflower Crust Pizza at www.recipegirl.com. Not only was it cheaper, but it was healthier, too!

This crust is made with cauliflower, cheese, eggs, and seasonings. Although it is not the same as regular pizza crust, it was a great substitute. The crust, crispy and brown, has a wonderful cheese, garlic, and oregano flavor. It was also simple to make.

I grated the cauliflower with a cheese grater (I used a whole cauliflower because I wanted to make two 9-inch pizzas). I cooked the cauliflower in the microwave for 8 minutes. I didn't have to add any liquid. Once cool, I added the cheese, eggs, and seasonings. After a quick stir, it was ready for the pizza stone.

I spread half the cauliflower mixture on each preheated pizza stone, shaping it into a 9 inch round pizza. I sprayed it with cooking spray, then baked it in a 450 degree oven for 12 minutes, until it was brown.

I added pizza sauce, deli ham, and pineapple tidbits before topping with cheese. It went under the broiler for 2 minutes until the cheese was melted and brown.

I sliced the Cauliflower Crust Pizza into the traditional 8 slices and served warm. We really enjoyed it!

This crust doesn't taste anything like cauliflower, so don't let a dislike of cauliflower stop you from trying this pizza. This would be a great recipe for those limiting their carb intake as well. One caution, this isn't a pizza that you can pick up and eat. Be prepared to use a fork.

Cauliflower Crust Hawaiian Pizza Recipe

Ingredients

Crust:
1 Large Head Cauliflower
2 Eggs
2 Cups Shredded Mozzarella Cheese
2 tsps dried oregano
1 tsp garlic salt
1 tsp onion powder

Toppings:
Deli Ham cut into small squares
Pineapple Tidbits
Pizza Sauce
Mozzarella Cheese

Directions:

1.  Preheat oven to 450 degrees. Also preheat pizza stone or spray pizza pan with nonstick cooking    spray.

2. Grate cauliflower into a microwave safe bowl. Cook in microwave for 8 minutes (dry). Let cool.

3. Add eggs, cheese, and seasonings to cooled cauliflower. Stir until combined.

4. Spread cauliflower crust mixture onto prepared pan into desired shape and thickness. Spray with nonstick cooking spray. Bake in preheated oven for about 12 minutes or until brown.

5. Add toppings to browned cauliflower crust. Place under broiler for about 2 minutes or until cheese is melted. Serve immediately.
