Stuffed Chicken Bacon Ranch Shells

Cut 2 pounds boneless, skinless chicken breasts into chunks, add 1 packet ranch seasoning, 1/2 teaspoon oregano, black pepper, and salt. Cook in skillet until browned and cooked through. (You can see the steam rising in the picture below.)

In a medium bowl, add cooked chicken, 2 cups mozzarella cheese, bacon bits, and 1/2 cup ranch dressing. Mix completely.

Stuff dry Jumbo Shells with chicken mixture. This could also be done with Manicotti. Layer in a 9x13 baking pan.

For Sauce, add 1 stick butter, 8 oz cream cheese, 2 cups milks, 1 cup mozzarella, 1/4 cup ranch seasoning, and a teaspoon of oregano to skillet. Melt, stirring constantly, over medium high heat. Do NOT let boil! The sauce will be lumpy and stringy.

Pour sauce over stuffed shells.

Cover with aluminum foil and bake in a 350 degree oven for 30-45 minutes or until shells are done. Remove foil, add 1 cup mozzarella cheese and broil until cheese is melted and browned.

Serve warm with Garlic Toast and a Salad.
